Greek salad style Souvlaki

Ingredients for 4 servings

Potato Dippers
4 pita breads
4 servings pork gyros 2 sliced tomatoes
Half a chopped onion
¾ cup crumbled feta cheese
¼ cup Kalamata olives sliced

1½ teaspoon dried thyme
ó teaspoon dried oregano
Salt & pepper
1 tablespoon lemon juice
5 tablespoons olive oil
1 finely chopped cucumber
1½ teaspoon chopped fresh dill

Directions

Fry the potatoes and cook the gyro meat and the pitas. Add the cucumber, tomatoes, olives, onion, olive oil, lemon juice and salt and pepper to a bowl and mix. Spread the mixture on pita breads; add the gyro, potatoes, crumbled feta cheese and season with oregano, thyme and dill.

Ingredients for 10 servings

½ litre cream
3 bay leaves
½ garlic bulb
2 thyme sprigs
pepper and salt to season
poultry bouillon
800g fregola pasta
chicken bouillon

200g peas
150g sugar snaps sliced in strips 1,6 kg Terrace Major
30 dill heads
30 2cm chive leaves
tahoon cress
200g gremolata salsa
1,5kg Potato Dippers

Directions

To make the cooked-cream, boil down the cream, bay leaves, garlic and thyme to about half. Season with pepper and bouillon. Boil the fregola pasta for 5 to 8 minutes in water with chicken bouillon. Drain the fregola and allow to dry-off on a platter. Blanch the peas and the sugar snaps until just tender. Mix the fregola with the cooked cream and then add the peas and the sugar snaps. Prepare the beef on the Green Egg until cooked as required. Put the fregola mixture in a saucepan and heat for a short time. Then, put the fregola mixture on a warm plate with the beef and garnish with dill heads, chives and tahoon cress. Sprinkle over the gremolata. Fry the Potato Dippers for 3 to 3½ minutes at 175°C. Serve on a plate with the beef or as a side dish.

Mustard & honey dip

Ingredients for 10 servings

Philadelphia, cream cheese mayonnaise
whole-grain mustard
Dijon style mustard
runny honey
chives, finely chopped

Preparation
1. Mix all the ingredients together
2. Season to taste with salt and pepper.

Ingredients for 10 servings

Red and yellow bell pepper
Roasted red bell pepper
Heinz tomato ketchup
Harissa, or other hot red pepper sauce

Preparation
1. Deseed the bell peppers and cut into 5 mm cubes
2. Puree the roasted red bell pepper in a liquidizer
3. Mix all the ingredients together
4. Season to taste with salt and pepper.

Garlic & herbs dip

Ingredients for 10 servings

Mayonnaise
Boursin ail & fine herbs
Spring onion, finely chopped
Fresh green herbs, finely chopped
Chopped spinach, frozen

1. Defrost the spinach, drain very well
